Recipe: Nana Bea’s Easy Latkes
I don’t recall my Nana Bea ever making potato pancakes, but she would have loved these! They are easy (but messy) to make, and are a bit different in flavor. My kids insist that they are better with ketchup, but I’m partial to applesauce. Enjoy!
Ingredients
- 1-2 lb bag of Diner’s Choice Shredded Potatoes
- 1 finely chopped onion
- ½ tablespoon of butter
- Cooking oil (corn or vegetable)
- 1 tablespoon of onion powder (or more to taste)
- Pinch of salt and pepper
- 1 cup of Matzoh meal
- 4 eggs
Instructions
- In a large mixing bowl, mix the potatoes, onion, eggs, 1 tablespoon of cooking oil, seasoning and the matzah meal. I use my hands. It’s messy but really the best way to assure a good mix.
- Pour enough cooking oil in a nice size frying pan to cover the bottom and then add a bit more. The idea is for the oil to rise about ½ way up the pancake.
- Heat the oil on medium heat and add the butter. It’s just a bit, and adds to the flavor. With your hands, form the pancakes about 1/2 inches in diameter. Thickness is up to you. If you “pack them”, then they will not fall apart in the pan.
- Cook until golden brown (this should take a few minutes).
