Recipe: Running Fuel Banana Bread

Ingredients

  • 1 2/3 cups all purpose flour
  • 1 tsp baking soda
  • ¼ tsp ground cinnamon
  • ½ tsp salt
  • 1 cup plus 2 tbsp granulated sugar
  • 2 eggs
  • ½ cup vegetable oil
  • 3 ½ bananas, very ripe, mashed
  • 2 tbsp low-fat sour cream
  • 1 tsp vanilla
  • 2/3 cup walnuts, chopped
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat over to 350F.
  2. Sift together first four ingredients.
  3. Beat sugar and eggs with a whisk until light and fluffy.
  4. Drizzle in oil, bananas, sour cream and vanilla.
  5. Fold in flour mixture and nuts.
  6. Pour batter into a buttered 9×4 inch loaf pan.
  7. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Variations

Substitutions:

  • Whole wheat is a great substitute for the all purpose flour and gives a great texture.
  • The vegetable oil could be substituted with apple sauce.
  • The sour cream could be substituted with plain yogurt.
