Recipe: Running Fuel Banana Bread
Ingredients
- 1 2/3 cups all purpose flour
- 1 tsp baking soda
- ¼ tsp ground cinnamon
- ½ tsp salt
- 1 cup plus 2 tbsp granulated sugar
- 2 eggs
- ½ cup vegetable oil
- 3 ½ bananas, very ripe, mashed
- 2 tbsp low-fat sour cream
- 1 tsp vanilla
- 2/3 cup walnuts, chopped
- ½ cup chocolate chips (optional)
Instructions
- Preheat over to 350F.
- Sift together first four ingredients.
- Beat sugar and eggs with a whisk until light and fluffy.
- Drizzle in oil, bananas, sour cream and vanilla.
- Fold in flour mixture and nuts.
- Pour batter into a buttered 9×4 inch loaf pan.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
Variations
Substitutions:
- Whole wheat is a great substitute for the all purpose flour and gives a great texture.
- The vegetable oil could be substituted with apple sauce.
- The sour cream could be substituted with plain yogurt.
