Recipe: Mallomars
Ingredients
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1 egg
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 12 large marshmallows, halved clockwise
Icing - 3 squares semi-sweet baking chocolate
- 1/3 cup unsalted butter
Instructions
- Preheat oven to 350° F. Lightly grease a cookie sheet.
- In a large bowl, cream butter with brown sugar.
- Add egg, milk and vanilla, and continue beating until light and fluffy.
- Stir in flour and baking soda.
- On a lightly floured board, roll dough 1/4 inch thick. Shape cookies with a 1 1/2 inch round cookie cutter.
- Arrange on cookie sheet and bake 6 minutes.
- Remove from oven and immediately place half a marshmallow, cut-side-down, on each cookie.
- Return to oven and bake 2 more minutes until marshmallow sticks to cookie.
- Transfer to wire racks and let cool.
- Prepare icing: in a small heavy saucepan over low heat, melt chocolate and butter; stir to blend.
- Spoon frosting over cookies covering marshmallows.
Quick Notes
- When melting chocolate, using a double boiler will help to reduce the chocolate from sticking to the walls. If you don’t have a double boiler, use two saucepans, one slightly larger than the other. Fill the larger saucepan about 1/2 way full and then place the smaller sauce pan inside of it.
- Melted chocolate seems to take best when it is slightly cooled. When about 1/2 of the chocolate has melted, turn the heat off. The rest of the chocolate will melt and cool.
