Recipe: Mallomars

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 egg
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 12 large marshmallows, halved clockwise
    Icing
  • 3 squares semi-sweet baking chocolate
  • 1/3 cup unsalted butter

Instructions

  1. Preheat oven to 350° F. Lightly grease a cookie sheet.
  2. In a large bowl, cream butter with brown sugar.
  3. Add egg, milk and vanilla, and continue beating until light and fluffy.
  4. Stir in flour and baking soda.
  5. On a lightly floured board, roll dough 1/4 inch thick. Shape cookies with a 1 1/2 inch round cookie cutter.
  6. Arrange on cookie sheet and bake 6 minutes.
  7. Remove from oven and immediately place half a marshmallow, cut-side-down, on each cookie.
  8. Return to oven and bake 2 more minutes until marshmallow sticks to cookie.
  9. Transfer to wire racks and let cool.
  10. Prepare icing: in a small heavy saucepan over low heat, melt chocolate and butter; stir to blend.
  11. Spoon frosting over cookies covering marshmallows.

Quick Notes

  • When melting chocolate, using a double boiler will help to reduce the chocolate from sticking to the walls. If you don’t have a double boiler, use two saucepans, one slightly larger than the other. Fill the larger saucepan about 1/2 way full and then place the smaller sauce pan inside of it.
  • Melted chocolate seems to take best when it is slightly cooled. When about 1/2 of the chocolate has melted, turn the heat off. The rest of the chocolate will melt and cool.
