Recipe: Warm and Tasty Autumn Vegetable Bake
Ingredients
- 10 Brussels sprouts
- 2-3 sweet potatoes
- 3 turnips (rutabagas – purple tops)
- 1 Tbsp fresh thyme
- 4 carrots
- 2-3 Tbsp olive oil or coconut oil
- 1 med/large sweet onion
- 1 Tbsp honey
- 1/4 cup chicken broth
- 1 lb apple-chicken sausage (1 inch pieces) (optional)
Instructions
- Preheat oven to 400.
- Wash vegetables and leave most skins on, except onions. Chop into 1/2 inch chunks and quarter Brussels sprouts.
- In small bowl, mix oil, thyme, chicken broth, salt and pepper to taste. Toss vegetables with this mixture.
- Bake in glass dish covered for 20 minutes. Stir well, drizzle on honey and return to oven uncovered for another 10 – 20 minutes, until vegetables are lightly browned. Cool ten minutes.
Variations
While mixing the vegetables before baking, add 1 lb of 1 inch pieces of apple chicken sausage.
