Recipe: Warm and Tasty Autumn Vegetable Bake

Ingredients

  • 10 Brussels sprouts
  • 2-3 sweet potatoes
  • 3 turnips (rutabagas – purple tops)
  • 1 Tbsp fresh thyme
  • 4 carrots
  • 2-3 Tbsp olive oil or coconut oil
  • 1 med/large sweet onion
  • 1 Tbsp honey
  • 1/4 cup chicken broth
  • 1 lb apple-chicken sausage (1 inch pieces) (optional)

Instructions

  1. Preheat oven to 400.
  2. Wash vegetables and leave most skins on, except onions. Chop into 1/2 inch chunks and quarter Brussels sprouts.
  3. In small bowl, mix oil, thyme, chicken broth, salt and pepper to taste. Toss vegetables with this mixture.
  4. Bake in glass dish covered for 20 minutes. Stir well, drizzle on honey and return to oven uncovered for another 10 – 20 minutes, until vegetables are lightly browned. Cool ten minutes.

Variations

While mixing the vegetables before baking, add 1 lb of 1 inch pieces of apple chicken sausage.
