Recipe: Potato and Egg Dinner Bake

Ingredients

  • 3/4 lb red potatoes, cut into 1/3 inch cubes
  • 8 eggs
  • 1/2 cup chopped red bell peppers
  • 3 Tbsp flour
  • 1/2 cup chopped zucchini
  • 3/4 tsp baking powder
  • 1/4 cup sliced green onions
  • 1 tsp garlic salt
  • 2 cups coarsely shredded sharp cheddar cheese
  • 1 cup low-fat cottage cheese

Instructions

  1. Preheat oven to 350. Spray an 11 x 7 inch casserole dish with non-stick cooking spray.
  2. Spread potatoes, pepper, zucchini, green onions and cheddar cheese into prepared pan.
  3. Whisk together eggs, flour, baking powder and garlic salt. Stir in cottage cheese and pour into prepared dish; stir lightly.
  4. Bake for 45 minutes or until eggs are puffed, golden brown and set in the center.
