Recipe: Potato and Egg Dinner Bake
Ingredients
- 3/4 lb red potatoes, cut into 1/3 inch cubes
- 8 eggs
- 1/2 cup chopped red bell peppers
- 3 Tbsp flour
- 1/2 cup chopped zucchini
- 3/4 tsp baking powder
- 1/4 cup sliced green onions
- 1 tsp garlic salt
- 2 cups coarsely shredded sharp cheddar cheese
- 1 cup low-fat cottage cheese
Instructions
- Preheat oven to 350. Spray an 11 x 7 inch casserole dish with non-stick cooking spray.
- Spread potatoes, pepper, zucchini, green onions and cheddar cheese into prepared pan.
- Whisk together eggs, flour, baking powder and garlic salt. Stir in cottage cheese and pour into prepared dish; stir lightly.
- Bake for 45 minutes or until eggs are puffed, golden brown and set in the center.
