Quinoa Tabouleh

Recipe: Quinoa Tabouleh

Ingredients

  • 1 cup quinoa
  • 1 1/4 tsp coarse salt
  • 1 3/4 cups water
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp course salt
  • 1 tsp lemon zest
  • 2 cups fresh parsley, loosely packed leaves, coarsely chopped
  • 1 medium tomato, cut into 1/4 inch dice – about
  • 1 cup
  • 1/2 cup mint leaves, coarsely chopped
  • 3 Tbsp olive oil
  • 3 Tbsp fresh lemon juice
  • Sliced, cooked chicken (optional)

Instructions

  1. Rinse quinoa. Toast in 3 qt. pot over medium-high heat, stirring, until fragrant, 6-8 minutes.
  2. Add water and salt and bring to a boil. Reduce heat to medium-low and cover and simmer approx. 15 minutes.
  3. Remove from heat and let stand, covered, for 10 minutes, then fluff with fork and let cool to room temp.
  4. Add remaining ingredients and mix thoroughly.

Variations

Add sliced cooked chicken.
