Recipe: Quinoa Tabouleh
Ingredients
- 1 cup quinoa
- 1 1/4 tsp coarse salt
- 1 3/4 cups water
- 1/4 tsp freshly ground black pepper
- 1/2 tsp course salt
- 1 tsp lemon zest
- 2 cups fresh parsley, loosely packed leaves, coarsely chopped
- 1 medium tomato, cut into 1/4 inch dice – about
- 1 cup
- 1/2 cup mint leaves, coarsely chopped
- 3 Tbsp olive oil
- 3 Tbsp fresh lemon juice
- Sliced, cooked chicken (optional)
Instructions
- Rinse quinoa. Toast in 3 qt. pot over medium-high heat, stirring, until fragrant, 6-8 minutes.
- Add water and salt and bring to a boil. Reduce heat to medium-low and cover and simmer approx. 15 minutes.
- Remove from heat and let stand, covered, for 10 minutes, then fluff with fork and let cool to room temp.
- Add remaining ingredients and mix thoroughly.
Variations
Add sliced cooked chicken.
